Saturday
I can't believe it's Saturday already! I tried working 5 hours this week and didn't do the best on Monday. By Tuesday I was so sore, had Wednesday off, worked 5 hours on Thursday and Friday, which was okay! Today, I was watching "The Pionner Woman" on foodnetwork, she made cesaer salad with homemade croutons. I had Texas toast bread to use up, so I made croutons with that bread! They taste pretty good. I used 1/2 cup of olive oil, 4 teaspoons of butter and 2 cloves of garlic not crushed, melt the butter in a cast iron skillet with the oil and garlic. Meanwhile cut up the bread into cubes and add to the melted butter/oil in the skillet. Toss around until all is mostly coated and then turn off heat. Try not to eat all the yummy croutons before you put on the salad! Blessings!

lobster
We had lobster for dinner tonight. I had bought 2 small tails for New Year's eve dinner and Gordon said he wasn't that hungry, could we have it another time and tonight was that time! He saw it in the freezer and said "hey, we should have that this week", well as usual the week has gone by and here it Saturday night! I took pics before I cooked it, not anything special except I have never fixed lobster and broiled them. They were okay, very little meat, but I did it and move on to something else! Blessings!!!

Wednesday
Boy, have I missed talking to you girls! I'm back to work 4 hrs a day this week and who knows how many next week. I'm planning on a few more, but Lord knows how many my back can handle, I'm trying to listen to my body! It says that my back is tired after 4 hrs a day
this week! Trying to figure out how to get this arthritis under control better without meds. I went to Marilu Henner's site and she recommends "food combining", which I think is interesting and tricky! Carbs and veggies or protein and veggies, but not together and fruit all by itself! Also no dairy or sugar. So, I'm trying to figure out meals before I dive into this. I love coffee and she says not so much, so it's doable!

spring is here???
I saw a robin today, a red-winged blackbird on Monday and the snow is pretty much gone from the yard! I'm thinking that spring is here! I made baked beans for supper tonight to have with chicken! I love baked beans and came up with recipe all by myself, but it's probably in everyone's cookbook somewhere!
Baked Beans: 1/2 of a small package of navy beans(soak these for 8 hrs at least), cook the beans for 2 hours to soften them up, check to see how soft they are(cook the beans at 30 minutes intervals until they are soft enough for you, maybe for another hour or so). I added, 1 cup of ketchup, 1/2 cup of molasses, 1 teaspoon of seasoned salt, 1 onion chopped, and 3/4 cup of brown sugar. Cook for another hour, add cooked bacon maybe 3 slices that are browned well. Yum! Blessings!!

more anti bucket list
I thought a few more things to add to the anti bucket list 1. no nascar watching on TV. Don't want to waste my time watching that. 2. no tattos for me, just don't see the point! 3. no piercing other than my ears, another I don't see the point, no pun intended! 4. no swimming with the sharks for this girl! Next time I will write the bucket list as it stands now. I have done a few things on the list since I wrote last year about the list. Example, I did drive down the road the wrong way,yes I know that's silly, but hey, it's my bucket list. Blessings! Photo is of a bobcat behind our house at a carcass.

ideas
I just read a blog and she talked about an anti-bucket list. Things you would never want to do before you die and I thought that was very creative, why didn't I think of that!!! So, what are a few things you never plan to do before you die? Here are few from me, 1. no sky diving or scuba diving or bunge jumping for me, the question I would want to pose to anyone, "why" would you do that?? I don't seek thrills like that!! 2. no skiing or tubing for me, back would hate it! 3. no iron man triathlons for me, why would you do that to your body?! 4. no karaoke night for me, I love to sing, but for me only! 5. no chickens in my yard, boo hoo for me! Gordon says the coyotes, eagles, weasels, raccoons or foxes would eat they all before we could protect them! This is just the short list, more to come! Blessings!

lunch
Today we are having friends in for lunch before I go back to work and the daytime fun stops! I'm making the "good ole standby" parmesan chicken! Recipe: 1 cut up chicken, bread crumbs, parmesan cheese, 1 can of cream of mushroom soup, water or milk. Preheat oven to 350. Spray baking pan(with sides) with Pam, in large dish place 1-1 1/2 cups of bread crumbs and 1/2 cup of parmesan cheese, mix this well, place pieces of chicken in the breadcrumbs and coat the chicken well! Arrange in baking dish(this needs to have deep sides, so nothing runs off into oven), and bake the chicken on both sides for 30 minutes a side. Mean time mix 1/2 can of water or milk with the can of soup. At the end of the hour of baking the chicken on both sides, pour the soup over the chicken and bake another 30 minutes. This is great the next day! Blessings!

new recipe
The other day I was searching for a recipe to serve today for lunch! I landed at She Cooks and LeAnn had a swedish meatball recipe I thought I can do this for lunch! So, that it whats for lunch today with our friends Joe and Roseanne. Recipe: for meatballs: saute 1 medium chopped onion in 2 tablespoons of melted butter in pan until the onion is translucent, let this cool before you add to it the following: 1c. of Italian breadcrumbs, 2 pounds of ground meat( I used our venison), 2 teaspoons of Worchestire sauce, 2 tablespoons of honey, 1 large egg, 1/8 teaspoon of nutmeg, salt and pepper. Mix this well and form meatballs. I placed mine on a rimmed cookie sheet and bake them for 20 minutes at 350. For the gravy: 3 tablespoons of butter melted in pan that you used for onions, add 3 tablepsoons of flour to make a roux, stir this around the pan for a couple of minutes till the flour is mixed in with the butter, add 2 cups of beef broth, 1 teaspoon of Worchestire sauce, 2 tablespoons of lingonberry jam( if you can't find lingonberry jam, don't substitute anything else),
1/3 cup of heavy cream. This makes a wonderful gravy, place meatballs into pan to throughly soak up some gravy! Serve with mashed potatoes! YUM!!!!!!!!!!!!!!! Blessings!
