corn salad


I made corn salad for a demo at the store last week and made it tonight for supper! Gordon is in corn heaven!!! Recipe: 2 cans of whole corn drained, 1/2 green pepper chopped, 1/2 red onion chopped, 1 cup of mayonnaise, 2 cups of shredded cheddar cheese. Mix this all together and chill for 1 hour before serving. Just before serving crush 2 cups of Frito's chili cheese corn chips and add to salad! Blessings!

mix


The twins and I never got around to making cookies! We were to busy! Fishing, farmers markets, seeing Cotton the cat, playing at the school playground, just too many things to do! But we did make a trail mix of sorts: candy corn, peanuts and M&M's! Very good, tastes like nut roll candy bar! Blessings!

Fun day





Today, Auntie Erika came over to see the twins and we headed out for Barron's Farmers Market. We actually got there too early, so headed into Rice Lake for lunch and a little shopping at Shopko. Then off to the farmers market we went. We had so much fun, spent too much money and ate way too much! I bought a watermelon and a bucket of strawberries(thank you Jennifer), both are so delish!!! The girls got necklaces for $5.00 from a lady who felt sorry for them! I also got some peaches from Michigan. We haven't tasted them yet, not quite ready, maybe tomorrow! Blessings!

twins



Well, our twin granddaughters are coming for a few days! We need groceries for all we eat when the kids are here! We buy certain things that Mommy and Daddy don't always get and it's a treat to have here! Like juice boxes, Fruit Loops, and ice cream(well, we usually have ice cream)! My mom used to make goober for my children when we went to their house. Goober is grape jelly and peanut butter all mixed up! I would like this year to give the girls a baking lesson, maybe something they can make when they get home! Maybe no bake cookies!! Or maybe trail mix and what can go together in the trail mix! strawberry season


Strawberries are here for the summer! I bought 2 buckets of them after work yesterday and got them all cleaned this morning! I needed some for my cereal!!! I froze 2 cookie sheets full and will make shortcake for dessert tonight! I asked Gordon what he wanted me to make whether it be pie, shortcake, jam or some in the freezer, he said "all the above." He's so funny! Blessings!

chicken and olives

I went to thepioneerwoman.com website yesterday and saw a beautiful pix of a chicken and olives dish! So, right there and then I decided that's "what's for dinner tonight"!
I made changes to the recipe just ever so slightly! I used grape tomatoes whole, thighs, fried the chicken in olive oil and added olives with garlic cloves! I just used what I had on hand, it was good! I would make it again and Gordon would eat it again, he said so!! Blessings!

Fun weekend


We have had a busy week with Kora. She went to work with Grandpa on Friday and managed to enjoy root beer, cookies and other toys! Gordon's brother and his wife came over on Saturday for a visit, they live in South Carolina! It was great to see them! Sunday we take Kora home! I'm sure they have missed her! Our house will be quiet! Blessings!

Kora


Kora (our 4 yr old granddaughter) is here for the very first time alone to visit with Mimi and Grandpa for the weekend! She is pretty excited to be here and she tormented her twin sisters that she was coming here and they weren't!!!! I wish I had thought of that when I went some where without my older sister, but alas I didn't and she probably wouldn't have cared a flying leap! So, we will a have a day together and then back to work for one day, then off for the weekend do Mimi stuff with Kora! Blessings! LOL!!!!

dressing up the jar salsa


What a title, I know! A friend brought salsa and chips yesterday for a party. Sheila took a jar of store salsa, added 2 fresh tomatoes finely chopped, cilantro, and 1 avocado, finely chopped. It was so nice and thick, stayed on the chips, didn't run off! It was on the creamy side, so please try it! Sheila used the Walmart store brand salsa, medium heat!Blessings!

Day off



I made the Lemonade cheesecake today, it's very good, but it could be more lemony! One packet on Crystal Light isn't enough, maybe half more of a packet! I'm just saying, it's better I tell you about my mistakes or failures than have you make it and you aren't happy with the outcome, so then you are mad at me, as it doesn't taste like you thought it should or I said it could! Hope that makes sense! It was a beautiful day here, I rode my bike which I haven't done in a long time(a month), which I did everyday the summer I got it(4 yrs ago), but then had all my knee surgeries and now I feel good enough to get back on! My plan is to get good enough to bike to my friend, Lori's house for fun! It's not that far, but it will probably take me most of the summer to gain back strength in my knees and legs to go 3 miles! Blessings!

lemonade cheesecake


I found this recipe and made it for demo this week, Lemonade Cheesecake. It was so easy peasy, that a 2 yr old could make it( maybe I will look for a 2 yr old, LOL)! Anyway, the ingredients are a pie crust of graham crackers, 1- 8oz. package of softened cream cheese, 1/4c. of skim milk, 1 tsp. of Crystal Light lemonade, 1-8oz. container of cool whip. Mix the milk and cream cheese with a mixer till creamy, add Crystal light and mix a little longer, then fold in the cool whip! It is so good! For the lemonade part, I used one of the packs of the Crystal light that you would use in a water bottle. It seems to be more than a teaspoon, but the lemon flavor is so fantastic!

rosemary


I need to tell you that rosemary survived the winter and I'm so happy!!! I usually kill her with kindness (I think) by over watering or not being in the right window, but this year she looks good! I love the smell of rosemary and do some cooking with her, but would love to find more! I use rosemary in bread, burgers, potatoes and salads, not sure where to put that wonderful herb next, but I'm looking! Blessings!
