Saturday


I am still under the weather with this coughing. I'm not coughing as much as yesterday, but still coughing enough to disturb my sleep and life in general! I'm tired and hurt from coughing so much, but being the trooper my father taught me to be, I'm still cooking for us! Tonight is pork roast, carrots and potatoes, YUM!!! Please pray that I get over this so I can go to work next week as I have missed 2 days of work already! Blessings!

supper


I've been home sick from work today with a nasty cough! I managed to cough most of the night away and tried to sleep in the other bedroom! So, it's chicken and mashed potatoes for supper tonight, my comfort food that I go to in times like this! It's bitter cold out today about -10 this morning and now about 10 above, WOW!!! I get this question all the time at the store,"what are you making for dinner?" Well, tonight was a special night because it is Wednesday, so I broiled New York strip steaks, YUM!!!!! We truly enjoyed every bite!! I made roasted green beans as the only side with the steak! What did you make for dinner tonight?? stuffed peppers


Last night I made stuffed peppers. There is one left and I have dibs! Gordon can eat the white bean and chicken chili!! I forget about making stuffed peppers which are so easy, the worst part is getting the peppers ready for stuffing! It's getting cold again after the snow fall which was about 6 inches or so, maybe less! It rained and snowed for 3 days, so it's hard to tell how much we really got for snowfall! Blessings!

hot dogs


With today being Sunday, we go to church and then out for brunch, so eating is thrown off for the day! So, tonight we will have hot dogs! I really like "Hebrew National" dogs, they are so good and made with beef! We have been watching movies today as the weather is icky outside! It's been raining yesterday and snowing most of the night into the day, now into the night again! The roads are greasy with this wet snow and traveling isn't the best idea for anyone! oven pancake


We love oven pancakes! They are so..........stinkin easy to make! Apple oven pancake is my favorite and since I do all the cooking, that's the one I choose! So here it is, my recipe: preheat oven to 450 degrees, you need an iron skillet. While oven is preheating, cut up one apple and add 4 tablespoons of butter in the skillet, place skillet into oven and get this pan screaming hot(be careful no to burn the butter and apples) about 5 minutes. Meanwhile in food processor, 4 eggs(large), 1/2 cup of milk and 1/4c. of flour. Blend all together and pour into skillet, place back in the oven for 15 minutes, then turn down oven to 375 degrees for another 10 minutes. This will puff up and looks so pretty! Serves 2-4, depending how hungry you are! Blessings!

eggs


I don't eat too many eggs just because, but the other day(about 2 weeks ago), I tried the egg in hole recipe! I used Vienna bread from the bakery and clarified butter(that someone gave me a tub of), and what a great breakfast! Gordon loved it as he loves fried eggs(me,not so much)! So, that's what's for breakfast for tomorrow! Do you like eggs? How do you make them: fried, scrambled, 3 minutes or poached? My Father-in-law loved 4 minute eggs on toast! Blessings!

ham and potato soup


I made potato and ham soup for supper! I'm not a big ham fan, but I like it every now and again! So, with a lot of leftovers, it has become soup! I'm also so excited to have 8 followers!! You guys are awfully quiet, no comments or ideas??? So, have a great evening and try the recipe: 6 small potatoes-washed and diced, 1 small onion-diced, 3 carrots washed and diced, 4 slices of ham diced, 2 tablespoons of olive oil and 1 cup of milk. In a large soup pot add the oil, diced veggies and ham. I did sprinkle 2 tablespoons of flour over the veggies/ once the veggies were soft, then added the milk, plus 1/2 cup of water. Blessings!

casserole


I made a chicken noodle casserole on Tuesday for supper and tonight was leftover night with that casserole as the entree! This casserole was nothing special, but one thing I did different was use carb free noodles! They are great, roasted garlic flavored! What is your favorite casserole? I grew up eating alot of hamburgers and tuna casserole! I really don't like tuna casserole as an adult! Probably ate it too many times! What did you eat as a kid that you can't eat now??? I'm putting up a photo of my daughter-in-laws cat, Sprinkles, beautiful cat!

colds


I have a cold and my head hurts! So nothing tastes good and I don't feel like cooking! Poor Gordon!! Anyway, I was talking to a friend today and she told me to put Vicks on my feet with a pair of socks, suppose to help, so I did it, nothing yet! I did however make baking powder biscuits to have with turkey and gravy like chicken ala king, but with turkey! Gordon ate it, so it must have been okay! Do you have a go to recipe when you are sick? What do you make when you need comfort food?? Mashed potatoes, mac 'n cheese, soup or pizza??? Blessings!

burgers


Lately, we have been on a hamburger kick for supper! I made olive burgers the other night, which is cheeseburgers with a mounds of stuffed olives chopped up and placed on top(YUM)! Last night, it was good old cheeseburgers! I really love Italian burgers made with Italian sausage and ground meat, then put a slice of mozzarella cheese on top! You could top this with pizza sauce and call it a pizza burger, the ideas are endless! What is your favorite burger?? Blessings!

chili


On today's menu is white bean and pork chili! I saw this recipe on www.thepioneerwoman.com She used chicken, but I had pork leftover and needed to use it up, not throw it out! It smells heavenly in the house according to the "hub". We are having some friends over to help eat the chili! Check out the website for the recipe or contact me for it! Blessings! On a sadder note, our dog was killed on the highway early Monday morning! He will be missed, we are grateful he didn't cause an accident!

Welcome 2010! I welcome the new year with excitement and hope! Excitement for new beginnings! Hope for our nation, my family, and joy for friends!I pray that 2010 will be a great year for each one of us! I ask Jesus to bless each one of you with only the abundance that God the Father can give! Pastor talked about being bold to family and friends about Christ, so I hope I can show the love of Christ to all of you! I realize this is a new twist for me without a recipe to share, but I do have one! Recipe for the new year: spend more time in the word of God, give more time to my friends in appreciation for all they do for me, spread God's joy and excitement to all who come my way and enjoy each day with all of you!
