Perfection?
Well, I made Deb's version of Nutella using peanuts tonight! YUM is all I can say!!! If you didn't check it out, here's the recipe from Deb: 2 cups of shelled and raw peanuts, 1/2 cup of dark chocolate cocoa powder, 1 1/4 cups of powdered sugar, 3 tablespoons of peanut oil, 1/4 teaspoon salt. Heat the oven to 400 degrees, spread the shelled peanuts on cookie sheet, I used cocktail peanuts as I couldn't find raw, place peanuts in oven for 5 minutes. Transfer peanuts to food processor and grind them for about 5 minutes( a long time), add cocoa, powdered sugar, salt and oil. Pulse till smooth about a minute or so, I ended up using a little more oil, mine came out too tight. Serve with crackers or toasted english muffin or on the spoon! Keep in refrigerator for a week! Peanut Butter and Chocolate
On smittenkitchen.com, Deb showed how to make your own Nutella, but she used peanuts. So that's what I plan to make this weekend! I've been busy with life and work, that I haven't had the time this week to cook very much. I made lasagna in my new pan from a few posts ago and it turned out very nice, ate every drop! With that size of a pan it takes a few days to eat things up! So, I will post over the weekend what the chocolate gooey goodness looks like and tastes like! Blessings!

Cleaning
Well, the other night "the Hub" and I cleaned out our chest freezer! We had only 1 1/2 bags of garbage to throw out which I didn't think was bad, but I felt terrible to not have used those items in my cooking! So, now I made a list of what is in the freezer and will tape it too the freezer! Hopefully we will not throw too much out next year! So far we have 3 turkeys, 3 hams and lots of bags of frozen veggies! Blessings!

Fiber One pancakes
A friend of mine has lost a huge amount of weight in the last 2 yrs. Judy did Nutrisystem and it served her well! But those of us that need to shed a few pounds and get healthy, but just don't have the money for that way,are
looking for another way! Judy did tell me about eating Fiber One pancakes and so I decided to try them out, what did I have to lose??? They are delicious! I added blueberries to mine, YUM!!! Judy did say that she adds few berries on top of hers with some sugar free syrup, that is a great tip! Blesssings! P.S. We ate our so fast that I didn't get a photo, sorry!

sliders
I decided to make sliders for supper on Sunday night, they were a great hit! I used Pillsbury biscuits for the buns, YUM!!! I made Italian burgers with our venison and added cheese. They were so good that night, that we had leftovers tonight!

Dilly Bread
I found on pioneer woman website the other day a dilly bread recipe. I haven't made in this years, probably 20! So, I made it the other night and forgot to buy dill seed, so I made it with spinach and herb blend, it was a hit!! Today I made it with rosemary(from my indoor plant who hasn't died yet!!!) Here is the recipe: 1 cup of lukewarm cottage cheese, 1 pkg of yeast, 2 tablespoons of minced onion,2 teaspoons of dill seed, 2 teaspoons of softened butter, 1/4t baking soda, 1/4t
salt, 1 egg, 2 tablespoons of sugar, 1/4 cup of water, and 2 cups of flour. Mix the water and yeast, I did add the sugar to that also, then I nuked the cottage cheese for 50 seconds to take the chill off, added the egg, baking soda, salt, and yeast mixture together, added the flour and cover with plastic wrap for about 1 hour. Grease a pan and turn out the bread into the pan, let that rise for 30 minutes. Bake at 350 for 40 minutes. Brush with butter after baking, serve warm!!!YUM!!!

Cranberry Tea
Tomorrow night we are hosting Bible study group here and I need to supply the drinks! So, there will be coffee, water and cranberry tea. I have a good friend who made this a long time ago and I love it! Here's the recipe, 1 bottle of Cranberry juice(any size large or small), 1 orange cut up, 1 cinnamon stick, 5 whole cloves and 3 cups of water. Put in saucepan all ingredients and simmer! YUM!! I have made a large percolator pot of this and put everything like the orange, clove and stick in the coffee holder filter thing, let it perk just like making coffee, so easy! Blessings!

Tuscan Bean Soup
I was hungry for a very good bean soup to make with the 2 cans of Cannelini beans I have, so I came up with this recipe. I adapted this from one I saw on line, but added some venison meat that I needed to fry up! Earlene's bean soup: 2 cans of cannelini, drained, 1 can of kale, 1/2 pound of ground beef, turkey, or venison, 1/2 onion, chopped, and 2 cups of of chicken broth. I fried the meat and added the onions when the meat was almost done, added the drained beans and kale, I let that cook for a minute or so. Add the broth and stir everything together. I did add some pepper and before the end of cooking I added 1 cup of large pasta rings, you could leave them out if you want, but I thought it would add a little more to the soup! It was a hit for the small group of people I served! Blessings!

New toy
I bought myself a new piece of cookware today with the gift card my husband gave me! It's so pretty and shiny, yellow is not my favorite color, but I love some yellow pieces to bring some joy and a smile on my face! I also bought a new hand mixer since my hand mixer is probably as old as I am since it was Gordon's Aunt Dorothea's and I took it when she died (well, maybe not as old as me, but close)! Blessings!

black-eyed peas
I read something just the other day that it is good luck to eat black-eyed peas on New Year's day. Well, I didn't have black-eyed peas in the house yesterday, so I made the dish today. It's a dip that you bake and serve warm or room temp. Gordon and I think it is very good!
Black-eyed pea dip: 1 can of black-eyed peas, drained and mashed a little bit, 1 cup of cheddar cheese grated, 1/4 of onion chopped, 1/4 cup of sour cream, 6 jalapenos chopped, 1/4 cup of salsa. Mix together and put in baking dish. Bake at 350 for 20 minutes, serve with chips!YUM!!! Blessings!

New Year 2011
Well, we made it through to 2011, didn't we! There has been many struggles this past year, some good and some not so great! So, moving onward and upward, I will go. Recipes will start going through my mind in a day or so and I will post many new ones this year as I got a new cookbook from Santa! Hopefully, some new salads I have tried, many newer healthy recipes and maybe a few new pics of my grand kids! Blessings!
