Tuesday notes
Well, I couldn't figure out a title,so it's just me talking(what I do best?)! My friend, Cheryl, from work made me a pair of beautiful pearl hanging earrings for nothing! What can I do for a friend like that??? Well, I'm making her a little loaf of pound cake! I just love Jennifer Reese's recipe for pound cake, of course, I changed it up a little. Recipe follows: 2 sticks of softened butter, 2 cups of sugar, mix these together for 5 minutes, add 5 large eggs one at time until well mixed, then add 2 cups of flour, 1 teaspoon of vanilla, 1/4 teaspoon of baking powder. Please don't over mix, when you finish with the baking powder turn off mixer and stir anything hanging on sides of bowl with the scraper. Place into a greased loaf pan, please have the oven preheated to 325 and put dough in the pan. Bake for 1 hour and 1/2 or until toothpick comes out clean. We are loving it! I also found a few more new sites to check out, simplysogood.blogspot.com and onegoodthingbyjillee.com Excellent sites for homemade soaps, bread, etc. Here's a picture of the bread made into rolls from simply so good. Blessings!

weekend
Can you believe that Memorial Day weekend is here which means summer is going to start in full swing on Monday ?!! We will be having some granddaughters during the summer and we can't wait. Boy, do I have some fun projects for them to do incuding learning to make bagels, pies and craft ideas that I got off of Pinterest!
We had a fun day, met Kate, Kurt and 3 girls for lunch at Forest Lake, Mn, then home for a very short nap, then off for walleye dinner in Stone Lake, with a stop at my longtime friend, Avis Thorp(who is 90). She had some tomato plants for us and gave us some seeds to plant like squash, lettuce and peas.
Thank you to our service men and women for laying down their lives for our freedom! Freedom comes at a cost and we thank them! Blessings!

Mother's Day
Happy Mother's Day to all of you! I hope and pray you have a great day with your family or friends or alone! I have a whole day with my daughter and it's going to be fun! Lunch out, shopping and being together!
Someone has asked me recently if I could have my mom back for the day would I want that, my response used to be yes, one more day with her, but as I have grown
older, my response is no, as I wouldn't want her to go back after a day with me! I know that sounds funny to some, but Heaven is so splendid and I know she is there, I can see her again when it's my time and that's enough for me! I truly do see her in my family and my grandchildren, little things they do or say or hold their heads, Mom is there! Have a great day and enjoy! Blessings!

Rhubarb dessert
My friend Joan told me about this cobbler dessert that is made with rhubarb and pancake mix. She didn't have the measurements handy in her mind, but I just went online and found one. So, with that in mind to make for dessert today, I picked the rhubarb from our garden spot and started to make it!
So here's the recipe that I adjusted for us: Rhubarb dessert. 4 1/2 cups of diced rhubarb, 1/2 cup of pancake mix and 1 cup of sugar. Pour that into a 9x9 pan( do not grease pan), in a bowl mix 1 cup of pancake mix, 1/4 cup of melted butter, 1 beaten egg and 1/2 cup of sugar. This is suppose to be crumbly, but mine was very wet like cake batter, so I just spread it out as best I could. Place in preheated oven at 350 and bake for 30 - 40 minutes until golden brown. Serve warm with ice cream or whipped topping. We having it plain as there is no ice cream in our freezer(Gordon is crying now)! I tasted it and it's good!! Blessings!

Sorry, I was doing it in my heart and thoughts of all of you, but the day came and went just like that! I have never done May baskets, but thought I would for a few special people, but that didn't happened either! I hope everyone is sticking with me on this blog and I'm working on a few projects to tell you all about! Blessings! Isn't that crab apple tree beautiful??
