Greetings!! He is Risen!!! We wish all of you a great and wonderful Easter day!! We are going to some dear friends home for dinner today! We ate lamb last night which we were going to have today, but since we got invited out we ate it last night. YUM!!!! Lamb is our tradition for Easter representing the Lamb of God! We haven't had it every year, but try. It is snowing here really heavy, funny! Looks like a snow globe being shaken vigorously by a kid!
But this too will pass, as spring is here, REALLY!!!! I do pray that all of you will have a great celebration day! Rejoice and be glad, as the kingdom of God is at hand! Blessings and hugs, Earlene

venison stew
I am making venison stew. Saw the recipe at "The Chew" TV show website. I tweak it to fit us and the venison I have in the freezer that I need to use up!! Looks pretty doesn't it! This picture is before I added the beef broth, you can see all the vegetables and meat!
Recipe is: 2 pounds of beef roast cut up or as in my case venison roast cut up. 1 pound of mushrooms cut up, 5 carrots cut into big pieces, 2 stalks of celery cut up. The recipe called for stout beer, I didn't add the stout beer as I didn't have it, I just added 4 cups of beef broth and 1 tablespoon of worcesterchire sauce. I made it in a cast iron pot and fried the meat first in a tab;espoon of olive oil, adding the veggies. It will cook for 1 1/2 hours on top of the stove. I suppose I could have made this in the crockpot, but wanted to see what it would look like this way!! Blessings during this Holy Week. I am trying to prepare my heart for this holy week and Resurrection Sunday!

skillet lasagna
Last night I made skillet lasagna. It was flavorful and spicy. I used the hot Italian burger we made with the venison!!! I cooked some pasta, like farfalle noodles, fried the meat, added the spaghetti sauce to the meat, added the pasta and cut up some fresh mozzarella cheese, let that cook on low with the lid on until the cheese melts a little!! YUM!!!! A couple of you have asked about my cleaning process and I am still purging, not as much, but slowly!! Thank you for keeping me on track! Blessings!

oven pancake
Good morning,
I made oven pancake this morning for us to enjoy!! I finally took the picture after half of it is gone, sorry!!! Recipe is: preheat oven to 450 degrees, I use a cast iron skillet for the pancake, so I put 1/2 stick of butter in the skillet and put the skillet in the oven while it is preheating. This helps to coat the pan so the pancake doesn't stick too much. This morning I added a chopped apple to the skillet with the butter. In the meantime, in the food processor put 3 eggs, 1/2 cup of flour and 1/2 cup of milk. Process this for 2 minutes, hopefully by this time the skillet is hot and you can pour this batter into the pan. Bake for 15 minutes at 450 and then turn it down to 375 for 10 minutes more. Serve with warm maple syrup! Blessings!!!

Sunday
Yesterday, Gordon and I had something! He had chills and slept all day, I slept a couple of hours, but tried to keep moving. I had a plan to move some things around and wanted to stay on course! I moved the Tupperware to another spot in the kitchen. I emptied some drawers in the hutch and moved the Tupperware there. I also threw out mismatch items and found some treasures! I found some beautiful old aprons that were my mom's. I found 5, 3 Christmas and 2 everyday, what a find!!! The online cooking class is going well. I made 2 recipes, I haven't felt like cooking during the week and the last 2 weekends have been family or sick! Blessings!!!
