Memorial Day

I remember as a kid in Chicago that Memorial Day was a fun day and great day for parades, bands and picnics! It is too bad that it's remembered as a day off and maybe some people get together at the local cemetary for a services for the fallen vets! I hope you had a special day and had a moment of silence for the people who gave of themselves for our freedom! Blessings!

sister time

My sis is here with her hub! We have had some really heart felt talks in the last 2 days! We haven't always seen eye to eye or haven't felt close, but this time with God's grace watching over, things are pretty good! We ate lasagna tonight and that was a hit! I made this a million times from thepioneerwoman.com website and it's a blessing that Gordon likes it because there's always plenty of leftovers! Blessings!

smoked turkey part 2

What to do with the leftover of the smoked turkey is on my mind! Any suggestions???? I didn't get any pics as Gordon got that thing cut up so fast it made my skirt fly up!! LOL :) So, should I got with a soup with a mexican flair? Or enchiladas or some fancy sandwiches?? Help me out here people!! Blessings!

smoking a turkey


Gordon decided to smoke a turkey today. It's raining and he is busy, so I'm left to watch the bird! We got a smoker from friends who left the area and have used it twice so far to smoke ribs and pork loin. So, this our adventure today between everything else I'm trying to get done before my sister comes. It is ridiculous what I'm putting myself through, after all she is coming to see me, not how clean the house is or if I got all the periennal gardens looking great(which they don't and probably won't)! I'll post pics later of the bird! Blessings!

coleslaw

I made this really easy coleslaw the other night. I'm not a big fan of coleslaw, so this is "BIG" deal! Prepackaged coleslaw, sunflowers seeds and dressing! That's about all I used and it was so good. I used the prepared dressing called "Rudolph's". It doesn't have too many carbs and that's what I had on hand! Still on my diet and lost 6 1/2lbs so far. I'm pretty excited!! Blessings!

tomato salad

Our Bible study had a get together last night and I was to take something, so being on this diet, I was challenged to take something I could eat and stay on my diet! I made a tomato and red onion salad. I sliced up 7 tomatoes and 1/2 of a red onion pretty thin. I then made a vinegar and oil dressing to pour over the salad, added some feta cheese and basil leaves cut up. It was a hit and I have leftovers for Sunday dinner!! We had a great evening with our friends! Blessings!

diet


Well, a few of my fellow co-workers had decided to do the new Dukan diet, I thought "that should be a good jump start for some weightloss!" So, this is day 3 and it's a tough diet for a few reasons, the first few days you are allowed only protein. So, after 2 days of only protein I decided this the day I would add the vegetables that are allowed (so the theory on this is one day you eat protein only and the next you add some vegetables with protein), so this the burger I came up with for supper! Ground turkey italian burger with spaghetti sauce and onions/green peppers that are sauteed in a non-stick skillet. It was really good, Gordon had seconds, I however did not as I needed to eat a nonfat yogurt with oat bran later! Well, wish me luck, I plan to stay on this for a while! Blessings!

taco dip

I made this for the store to demo on Saturday, a taco layered dip which is served cold! Recipe: 1 can of refried bean and 1 packet of taco seasoning mixed together for the 1st layer, next layer is 1 8oz package of cream cheese(softened) and 16oz of sour cream mixed well, 1-16oz jar of salsa, 1 small can of sliced black olives, 1 small bunch of green onions slices, 1 green pepper diced, 1 cup of shredded cheese, and a layer of shredded lettuce. This should total about 6 or 7 layers. I didn't add the tomato diced as I didn't want it to get so mushy! I used the taco strips from Frito Lay which were very good! Blessings!

Mom

I wish I had a picture to share with all of you of my Mom! She was an older mom when I came along for the ride! Mom was a working mom, she taught school, mainly 2nd grade and loved it! She said if she could do it over she would be a nurse, but she was a great teacher! Her favorite flowers were the exotic ones like bird of paradise, but her garden was filled with peonies and roses! Her father brought her 2 apple and 2 maples trees when they moved into the house I grew up in from the farm in southern Illinois. She made apple pie like no one else! pizza

I have been on downward spiral lately with the making of dinner! I'm burnt out and nowhere to run! Gordon thinks peanut butter and jelly isn't an option, LOL!!!:) Anyway, I asked him yesterday what did he want for dinner and he said "homemade pizza". I said get some meat out of the freezer and I'll make it! So, I picked up Pillsbury's pizza crust which I have never used and some cheese, here's pizza! It was good and I will buy the crust again, I'm also sorry for the blurry pics! Blessings!
