pancakes


I made oven pancake this morning for us! We love apples in ours, we get a little bit of fruit in our pancake! I forgot to take pictures of the this pretty thing! I used farm eggs(thank you Lori) and so the pancakes were more yellow! Happy Tuesday! Blessings!

MIA


Sorry that I've been MIA lately! It's been really busy at work and that's my story!! I've also taken the lazy way out of cooking lately, just spring fever I think and burn out! Tired of cooking and coming up with ideas, but this is a new week and I'm back on board! This is Holy week for some people and the ending of Lent! We don't do anything special for Lent except to acknowledge it as this time of year! I'm on the walking/ getting fit kick right now! Gordon got my bike out and I took it for a short spin, just a little off on riding it, I think I'm kinda scared of falling on my knees! Plus my helmet is broke and I need to replace it! Here's the question for the week: Do you do anything special for Easter? Do you cook and have friends and family in or do you go somewhere?? Color eggs??? Have a great evening! Blessings!

ham


WE (meaning I)bought a ham on Friday, so I have been making a few ham meals this week,plus I froze some ham for later! Tonight was ham fried a little bit, then I added 4 eggs (that I had whipped)to the ham, make some toast and that's supper tonight! Rachael Ray made a pasta meal on her Tuesday talk show which was pancetta, peas and pasta, so that's an idea to use the rest of the ham for tomorrow's supper! Blessings!

cooking class


I signed up for a cooking class at the high school for Monday night! It's a tribute to Julia Childs! We will learn how to make mayonnaise, hollandaise sauce and quiche, just to name a few! I'm so excited! I'm also showing you what March 21, 2010 looks like here! It's unheard of for March to have very little snow and be about 45 degrees today! Spring has arrived! Blessings!

texas toast pizza


We have a new product at the store called Texas Toast pizza, all I can say is "there goes the diet every now and then"! I brought it home for supper and made a huge salad to counter balance the pizza, that's my kind of thinking!!!! I am trying very hard to make better choices in eating, but it's hard some days! I know this much, I'm pretty tired of fried food(that's what the deli has a lot of)! So, I've been taking my lunch of homemade meatloaf and chili(without beans)! Have a great evening! Blessings!

fish tacos


I used my "George Foreman" grill tonight and made fish tacos, I must say they were excellent! We had dinner the other night with friends and she served a ranch salad dressing that has chiptole seasoning in it! YUM!!!! It's just the right amount of heat. I opened up a bag of coleslaw and poured a small amount on the coleslaw mix, place that on top of the grilled fish and viola, fish tacos ala Earlene! It was 65 degrees today and spring is here! We might another blast of cold and snow, but we all know that it won't last long! Blessings!

Erika and I


I'm up pretty darn early today! Erika and I are going to the twin cities for a day of shopping. This is fun because I think it's the first time we have done this kind of shopping since she got married 2 1/2 yrs ago! We have been busy with our own lives that we haven't had a whole day of mother/daughter time which will be fun! When we get back, Gordon and I are going to some friends house for supper! This is a great day off! Blessings!

turkey and gravy


In the cleaning last week of the freezer above the refrigerator, I found a container of turkey and gravy. I was very excited! I made baking powder biscuits to pour the hot turkey and gravy over, that's dinner!! It was so good! Fast and easy came to mind for tonight!!! I am also excited after talking to the Home Ec teacher for Spooner High School today, she is offering some really cool cooking classes! I think I will go and tell you all about them! I am also a bad grandma, I took only one photo of the girls this past weekend! We had so much fun, playing on Grandpa's hills of snow, playing with the wagon, playing ball and chalk drawings on the sidewalk! Blessings!

noon dinner




Kurt and the girls are here for the weekend! We are very excited to have them come, it's really fun to have them! Auntie Erika and Uncle Trevor are stopping over for noon dinner! The girls(adults,too) really like that because we don't get to see them very often! So, I bought a beef roast and put that in my enamel roaster with home grown potatoes(from our garden). I made fruit salad and have some frozen veggies, I think that's "what's for dinner" today! Blessings!

Fresh Mozzerella Salad


Well, when we went to the Food show a few weeks back, I saw a salad and thought "will I remember how this looks and taste to recreate it?" Well, I did this week! It's made with a fresh mozzarella ball, 1 can of diced Italian tomatoes, grape tomatoes, Italian dressing, green onion(3) diced, 1 teaspoon parsley dried, and garlic. Freeze the cheese and it will dice up easier(30 minutes), add the can of tomatoes, grape tomato(sliced in half), parsley, dressing(1/2 cup) and garlic. Refrigerate for at least 1 hour, would be better if it was overnight. Serve with garlic bread(so you can mop up the juices)! YUM!!!! Blessings!
